At the limit?
If you try to create a third list, Grocer will offer the Pro upgrade. Nothing is ever deleted when you hit a limit — and if a Pro subscription lapses, every list stays in your iCloud and stays fully editable. You just can't create new lists past the free limit until you resubscribe or trim down. People you've already invited keep their access.
